Basic Zucchini Casserole
Ingredients:- 3 tbsp. butter
- 2 tbsp. flour
- 1 sm. green pepper
- 3 tomatoes
- 1 med. onion
- 1 tsp. salt
- 1 tbsp. brown sugar
- 4-5 med. zucchini
- 3/4 c. cracker crumbs
- 1/2 stick butter
- lg. casserole pan
- 1. Melt butter, and add flour by gently whisking.
- 2. Chop green pepper, tomatoes and onion, and add them to the butter mixture.
- 3. Cook over low heat for approximately 5 minutes.
- 4. Add salt and brown sugar to the butter mixture.
- 5. Thinly slice the zucchini, and place it across the bottom of the casserole pan.
- 6. Cover the zucchini with the butter mixture.
- 7. Sprinkle with cracker crumbs, and dot with butter.
- 8. Bake at 350 degrees for approximately 30 minutes.
Zucchini Casserole with Hamburger
Ingredients:- 1 pound hamburger
- 4-5 servings rice
- 1 can tomato sauce
- 2 tbsp. butter
- 1/3 c. Colby cheese
- 1/3 c. American cheese
- 1/3 c. Monterey Jack cheese
- lg. casserole pan
- 1. Brown hamburger and drain.
- 2. Cook the rice.
- 3. Mix hamburger and rice together with tomato sauce.
- 4. Thinly slice the zucchini and saute with butter.
- 5. Place hamburger mixture across bottom of casserole pan.
- 6. Layer zucchini over the hamburger mixture.
- 7. Grate and layer the cheese over the zucchini.
- 8. Bake at 350 degrees for approximately 30 minutes or until cheese has melt together.
