Basic Zucchini Bread
Ingredients:- 3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 3 eggs
- 1 c. vegetable oil
- 2 1/4 c. sugar
- 2 c. grated zucchini
- 1. Preheat oven to 325 degrees
- 2. Grease and flour two 8 x 4 inch pans, and set aside.
- 3. Sift flour, salt, baking powder and baking soda together into a bowl.
- 4. Add oil and sugar to eggs, and beat the mixture to a creamy texture.
- 5. Add sifted ingredients to the creamy mixture and beat well.
- 6. Evenly stir in grated zucchini.
- 7. Pour mixture into greased pans.
- 8. Bake approximately 40 - 60 minutes.
- 9. Cool in pans on a rack for 15 minutes.

- 1 tbsp. ground cinnamon
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 c. sugar
- 3 eggs
- 1 c. vegetable oil
- 2 tsp. vanilla extract
- 2 c. grated zucchini
- 1 c. semisweet chocolate chips
- 1. Preheat oven to 350 degrees.
- 2. Grease two 8 x 4 inch pans, and set aside.
- 3. Mix flour, cocoa, cinnamon, baking soda, baking powder and salt in large bowl.
- 4. Combine sugar and eggs in a separate bowl and beat well.
- 5. Add oil and vanilla to the egg mixture and beat until mixed.
- 6. Add zucchini to the egg mixture.
- 7. Stir flour mixture into egg mixture.
- 8. Add chocolate chips to mixture.
- 9. Pour mixture into greased pans.
- 10. Bake approximately 40-60 minutes.
